Directions
Chicken Marinade:
- Cut chicken into medium sized cubes.
- In a bowl, combine the chicken with the marinade ingredients. Toss to coat then marinate for about 20 minutes.
Mix sauce and prepare vegetables before starting any further steps.
Cooking the Chicken:
- Heat peanut oil in a pan over medium-high heat. Wait for it to get hot.
- Add in the chicken and allow it to brown on one side before moving it.
- Once fully cooked, move the chicken to a bowl.
- Wipe out the pan. Letting it cool down slightly then adding some water can help.
Aromatics:
- In a small pan, heat peanut oil over medium-high heat. Wait for it to get hot.
- Add green onion and stir for about 1 minute.
- Add garlic and ginger. Stir for about 30 seconds until aromatic.
- Remove from heat.
Stir Fry:
- Heat the sauce in a large pan over medium-high heat.
- Add green onion, garlic, and ginger and mix into the sauce.
- Add broccoli, carrots, and mushrooms. Cook until the broccoli is softer but still has a slight crunch.
- Add in the chicken and gently stir to coat it thoroughly in the sauce.
